Toddler Approved Arugula Salad
This is a favorite dish at our house. It is incredibly easy to make, uses very simple ingredients, and is something you can whip together in literally a minute or two. My son loves his arugula salad and will choose it over other veggies often.
This salad is a very quick and easy recipe perfect for lunch or a dinner side, and a great way to get some extra greens into your little's day. We usually pare it with a side of rice & beans and fruit for lunch, or on the side of our main entree during dinner.
Since it's such an easy salad to make I don't typically measure the ingredients, but I attempted to give you an idea of how much goes into the dressing. A little goes a long way for this since arugula has such a wonderful flavor on it's own already. Use all organic ingredients if you can.
Ingredients:
Handful of Arugula
Juice of 1/4 Lemon
1 tsp. Extra Virgin Olive Oil
Dash of Himalayan Salt
Dash of Pepper
Directions:
- Throw the arugula in a bowl (I usually just use the bowl my child will eat out of).
2. Drizzle on the olive oil.
3. Squeeze on some lemon juice (don't use too much, a little goes a long way).
4. Put in a pinch of salt & pepper.
5. Cut up with your kitchen scissors into bite sized pieces & serve!

This salad is truly a huge favorite. As I was taking these stock photos in my kitchen, my son was in the living room. When he heard me cutting up the salad, he ran in and said "Arugula salad? I want some!"

Awareness Over Perfection
The most important thing here is making this food available to your child(ren), not whether they devour it the first (or 7th) time or not.
